🍛 Dinner

  • Chickpea veggie burgers, by Running on Real Food. Though you'll have to check out our Recommendations page for a link to the original recipe in Eat To Live, this free one by Running on Real Food is close enough. Wow, what a family favorite! This was one of the first plant-based recipes we ever made, and we've stuck to it over the years. We usually omit the zucchini from the recipe and it still holds up great.

  • Ultimate vegan chili, by Noracooks. Evvvveryone likes this chili. You can adapt it for spice, gluten tolerance, etc. Perfect over brown rice or topped with oil free chips. John is compelled to mention that it's best on a crisp fall afternoon with a football game on in the background, too. Your mileage may vary.

  • Easy chana masala with raita, by Noracooks. Second choice in a row by Noracooks! We do love a good Indian-style meal, and this one does the trick. Try it with a side of steamed veggies and a wedge of whole wheat naan. If you like the gentle, tomato-based spice from this recipe, you'll find similar dishes in Practically Vegan, one of our top cookbook recommendations.


🥪 Lunch

  • Sweet potato quesadilla, by @thechowdown. Like the chickpea burgers above, we're linking to a freely available recipe here, but the real thing is in Healthy Girl Kitchen, which you can find linked in Recommendations! What a delicious, fiber-rich lunch this makes. A side of guacamole, vegan sour cream, and salsa, and you'll be happy.

  • Chia peanut butter, by... us?? If you're like us, you still have the palette of a 5 year old – and need to feed one! But peanut butter can be a little lacking, so why not add some calcium, fiber, minerals, and protein to it with a teaspoon of chia seeds mixed into the peanut butter? Top with fresh jam or, I don't know, bananas. Maybe you're feeling like Elvis today.
