These versatile nuggets are just salty enough, crunchy on the outside, chewy on the inside, and work in about a thousand recipes and veggie bowl combinations. They're a hit with kiddos, too. We make them without oil and enjoy almost half a gram of protein with each bite of cholesterol-free, isoflavone-filled soybean. Wait... plants have protein??
Creamy Butter Beans, by Cooking for Peanuts. John was a skeptic. Heather was a believer. Now we're both happy creamy butter bean connoisseurs! Put it on toast and serve with a side of broccoli or greens.
Grilled Peanut Tofu over Cucumber Radish Salad, by Mealime. Delicious, adaptable comfort food recipe. Literally every time we make it and take the first bite, someone at the table closes their eyes and lets out a, "Mmmm, wow." By the way, our second careers might be Mealime influencers. We love the ease of building a vegan meal plan, paying for groceries right on the app, and driving over to the store for curbside pickup. And Mealime recipes are delicious! Chocolate Chia Pudding, by Plant Powered Families. Our kids prefer this to the prepackaged stuff! Sweet, but full of natural plant fiber from the dates, minerals and blood pressure reducing effects from the non alkalized cocoa powder, and protein and pudding texture from the chia seeds. Really incredible with vegan chocolate chips and berries!
